History of cooking in Iran
Iran, along with China and Rome, is one of the three schools of global food and it can be boldly introduced as the best food tourism destination.
The local dishes of Iran, from north to south and from west to east, are so diverse that collecting them requires an encyclopedia of several thousand pages. During the Persian Empire, Iran was a neighbor of the countries of the former Soviet Union, as well as Afghanistan, Pakistan, Arab countries and Turkey.
In addition to Iran being on the trade route of the Silk Road and having close relations with Europe, the Far East and Africa, this issue fully explains why the range of native foods of this country is so wide.
Iran has 31 provinces, each of which has dozens of local and original dishes of their own.
Authentic Iranian food
"The common food of Iranians is a meal made of meat, vegetables and cooked peas, which is brought to the table before rice." These are the words of Jean Chardin, a French traveler who visited Iran at the end of the Safavid period and described a dish similar to today's Abgousht as the traditional food of Iranians. In addition to Chardin, Yakub Polak, a physician and traveler who visited Iran during the Qajar period, has tasted Iranian broth: "They cook the meat in water and put chickpeas in it; It is called pea broth or broth. They bring it to the table with a portion of meat.
